Durbanville Hills

Durbanville Hills ExteriorDurbanville Hills wine cellar lies in the first valley from the Cape, just twenty minutes' drive from Cape Town. It is situated beyond the Tygerberg or Luiperd's Bergen (leopard's hill) in the Durbanville wine producing region, merely 10 kilometres from Table Bay.
Stunning views onto two World Heritage sites, namely, Table Mountain and Robben Island, as well as the Atlantic Ocean, only 7 km away, and the gentle hills of the Tygerberg, make the Durbanville Hills wine cellar spectacular, to say the least. This ultramodern cellar was built with only one objective in mind: to make top quality wine from a top quality, maritime wine region.

When the Durbanville Hills cellar was commissioned, it was with the firm commitment to gear cellar technology towards the creation of top quality wine in a premier wine region. The result is a brand-new facility that can compare with the world's best. The most advanced cellar technology internationally available, is applied.

A control platform provides an excellent view of all reception and pressing activities.
The grape reception unit, destemmer, crusher and pump are of the most modern design and feature variable speeds to handle each cultivar differently.

A cooling system quickly cools the fruit to a low temperature to release only the beneficial aromas from the white varietals' skins into the juice. This results in wines with consistent, as well as longer flavour holding.

A mobile press and lobe pump ensure that the juice is handled as little as possible and may be pumped over considerably reduced distances. This technological innovation greatly enhances the quality of the wine. It has the advantage of reducing the release of negative tannins, therefore resulting in top quality wines with only beneficial tannins from skins and pips.

A special feature of the Durbanville Hills cellar is the number of relatively smaller fermentation tanks. Here, every batch arriving from the various vineyard sites can be vinified separately. Cask fermentation facilities have been constructed underground for constant temperature and humidity control. The impressive maturation cellar accommodates 300 litre barriques, made from the finest French oak available.
